A Morning at the OP Farmer's Market

Farmer's Markets....love them! This morning we treated ourselves to a quiet morning of a lazy bicycle ride to the market. This is our version of a cornucopia. I was inspired by the beautiful veggies that we bought so for dinner we had vegetable hoe cakes. Delicious!

Funny...I got that idea from you!! I had already put all of the veggies away...then I said the self "Self, this would be a great shot for the blog." I'm having leftovers for lunch today....guess what?

Umm, okay Martha... You're putting us all to shame. My veggies are in ugly supermarket plastic sacks crammed into the bottom two drawers of our fridge. You have inspired me to find a farmer's market. And how 'bout that recipe for hoe cakes?

There are so many places I can go with the hoe cakes but I will try to ignore the "sisk" side of me just this once. OMG so simple. I took all of the veggies (squash, onions, garlic, corn on the cob, tomatoes, mushrooms...anything you want)sauteed them a little (with cayenne and smoked paprika), then infused them with chicken broth and a little bit of heavy whipping cream and simmered for a few minutes. Shaved some parmigiano reggiano on top and served over polenta. Pretty good if I do say so myself. Enjoy!
